French Onion Soup
A classic onion soup, with onions slowly browned in butter, beef stock and gratinated with mozzarella and gruyère cheese.

Ingredients
Type a number or fraction (for example 0.5, 2 or 1/2) and the amounts recalculate.
- 8 slicesFrench bread
- 3beef stock cubes
- 8 cupscups of water
- 5large white onions
- 125 gbutter½ stick
- saltto taste
- pepperto taste
- nutmegto taste
- 1/2 cupgrated mozzarella
- 1 cupgrated gruyère
Instructions
- Slice the onions and sauté them in butter over low heat until golden (about 1 hour).
- Separately, make the stock with the water and the cubes.
- When the onion is light brown, add the stock, salt, pepper and nutmeg.
- Let it season over low heat for a while.
- Ladle the soup over 2 slices of bread in individual oven-safe bowls.
- Top with the cheese and gratinate in the oven until well browned. Serve immediately.
