French Onion Soup

A classic onion soup, with onions slowly browned in butter, beef stock and gratinated with mozzarella and gruyère cheese.

Ingredients

Type a number or fraction (for example 0.5, 2 or 1/2) and the amounts recalculate.

  • 8 slicesFrench bread
  • 3beef stock cubes
  • 8 cupscups of water
  • 5large white onions
  • 125 gbutter½ stick
  • saltto taste
  • pepperto taste
  • nutmegto taste
  • 1/2 cupgrated mozzarella
  • 1 cupgrated gruyère

Instructions

  1. Slice the onions and sauté them in butter over low heat until golden (about 1 hour).
  2. Separately, make the stock with the water and the cubes.
  3. When the onion is light brown, add the stock, salt, pepper and nutmeg.
  4. Let it season over low heat for a while.
  5. Ladle the soup over 2 slices of bread in individual oven-safe bowls.
  6. Top with the cheese and gratinate in the oven until well browned. Serve immediately.
