Chicken Loaf
A baked loaf of ground chicken breast with onion and eggs, served sliced with a sauce made from its own broth and rice on the side.

Ingredients
Type a number or fraction (for example 0.5, 2 or 1/2) and the amounts recalculate.
- 1 1/2 poundschicken breast
- 1medium onion
- 4eggs
- chicken brothreserve the cooking broth for the sauce
- salt and pepperto taste
- 1 teaspoonsoy sauce
- cornstarch to thicken the sauceas needed
Instructions
- Cook the chicken breast in salted water until tender, reserving the cooking broth.
- Grind or finely chop the breast together with the onion.
- Mix the chicken with the eggs, salt, pepper and soy sauce until well combined.
- Pour the mixture into a greased mold and bake at 350° until set and browned on top.
- For the sauce: heat the reserved broth and thicken it with a little dissolved cornstarch, adjusting the seasoning.
- Unmold the chicken loaf, slice it and serve topped with the sauce, accompanied by rice.
