Chicken Loaf

A baked loaf of ground chicken breast with onion and eggs, served sliced with a sauce made from its own broth and rice on the side.

Ingredients

Type a number or fraction (for example 0.5, 2 or 1/2) and the amounts recalculate.

  • 1 1/2 poundschicken breast
  • 1medium onion
  • 4eggs
  • chicken brothreserve the cooking broth for the sauce
  • salt and pepperto taste
  • 1 teaspoonsoy sauce
  • cornstarch to thicken the sauceas needed

Instructions

  1. Cook the chicken breast in salted water until tender, reserving the cooking broth.
  2. Grind or finely chop the breast together with the onion.
  3. Mix the chicken with the eggs, salt, pepper and soy sauce until well combined.
  4. Pour the mixture into a greased mold and bake at 350° until set and browned on top.
  5. For the sauce: heat the reserved broth and thicken it with a little dissolved cornstarch, adjusting the seasoning.
  6. Unmold the chicken loaf, slice it and serve topped with the sauce, accompanied by rice.
