Pound Cake (Victoria)
Classic pound cake, rich and fluffy, made with equal parts butter, flour and sugar.

Ingredients
Type a number or fraction (for example 0.5, 2 or 1/2) and the amounts recalculate.
- 1 poundbutter
- 1 poundflour4 cups
- 1 poundsugar2 cups
- 10eggs
- 1 teaspoonsalt
- 2 teaspoonsbaking powder
- 2 teaspoonsvanilla
Instructions
- Sift the dry ingredients and set aside.
- Beat the sugar and softened butter until creamy and pale.
- Add the vanilla and the eggs one by one.
- Fold in the dry ingredients and beat gently.
- Pour into a greased and floured pan or one lined with parchment paper (it can be greased with oil and brown sugar).
- Bake in a preheated oven at 350° for 30 minutes or until a knife comes out clean.
Notes and variations
- María Luisa's variation: bake in two pans and fill with blackberry and strawberry jam.
- Sofía Díaz's variation: add ½ cup of orange juice.
- Lemon Victoria: replace the vanilla with the zest of two lemons.
- With cornstarch: replace 8 tablespoons of flour with 8 of cornstarch.
