Prune Cake
Spiced cake with cloves and cinnamon, soaked in a syrup of prunes in wine and topped with the prunes.

Ingredients
Type a number or fraction (for example 0.5, 2 or 1/2) and the amounts recalculate.
- 5eggs
- 2 cupswheat flour
- 1 cupsugar
- burnt caramelto taste
- 2 teaspoonsbaking soda
- 1 tablespoonground cloves
- 1 teaspoonground cinnamon
- 1/4 poundbutter
- 1 cupcold milk
- 3/4 cupsugar
- 1jar of prunes
- 1glass of wine (dark or table wine)
- 1 cupwater
- caramelto taste
Instructions
- Beat the egg whites to stiff peaks; separately, beat the yolks with the sugar.
- Add the sifted flour, the beaten egg whites, the melted butter, the burnt caramel, the cloves, the cinnamon and finally the baking soda dissolved in the milk.
- Pour into a greased and floured ring pan.
- Bake at 350° until a knife comes out clean.
- For the topping, cook the prunes with the water, the caramel and the sugar.
- Pour the hot syrup over the cake.
- Remove the pits from the prunes and place them on top, covering it.
Notes and variations
- The cake is made the day before.
- The first soak of syrup should be hot and the rest the next day, with both cake and syrup cold.
