Arequipe (Dulce de Leche)
Colombian dulce de leche, slowly cooked until thick and caramelized. Based on María Inés Quijano’s arequipe.

Ingredients
Type a number or fraction (for example 0.5, 2 or 1/2) and the amounts recalculate.
- 4 lmilk
- 3 cupssugar
- 1 teaspoonbaking soda
- 1cinnamon stickjust one
Instructions
- Boil all the ingredients in a large pot with 2 knives laid on the bottom.
- As soon as it starts to thicken, remove the knives and the cinnamon stick.
- Stir constantly until you can see the bottom of the pot.
- Pour into a container and sprinkle with a little sugar and cinnamon.
