Marshmallow Icing
A fluffy marshmallow-style icing made with soft-ball syrup, beaten egg whites and gelatin, to decorate cakes.

Ingredients
Type a number or fraction (for example 0.5, 2 or 1/2) and the amounts recalculate.
- 1 poundrefined sugar
- cream of tartara tiny bit
- 1/2lemon (juiced)
- 1envelope of unflavored gelatin
- 1 cupwaterscant cup
- 5drops of coconut or almond extract
- 2egg whites
Instructions
- Bring the sugar to the heat with the lemon juice, the cream of tartar and the water; cook until soft-ball stage.
- Separately, dissolve the gelatin.
- Beat the egg whites until stiff.
- Pour the hot syrup in a thin stream over the egg whites while beating constantly.
- Add the dissolved gelatin and the extract, and keep beating until fluffy and firm.
Notes and variations
- This recipe requires an electric mixer.
- It is a topping for cakes.
