Pineapple Fritters (Hojuelas)

Thin, crispy fritters fried in oil, with the dough moistened with pineapple juice.

Ingredients

Type a number or fraction (for example 0.5, 2 or 1/2) and the amounts recalculate.

  • 1 poundwheat flour
  • 4 tablespoonssoftened butter
  • 1 teaspoonbaking powder
  • 1egg yolk
  • 1 cuppineapple juice with a little warm water
  • 1 teaspoonsalt

Instructions

  1. Little by little, mix with your fingers the flour, butter, yolk, baking powder and salt.
  2. Gradually moisten the dough with the pineapple juice and knead gently until forming a smooth dough that does not stick to your hands.
  3. Let the dough rest for a quarter of an hour, covered with a cloth.
  4. Roll out with a rolling pin on a floured surface until very thin.
  5. Cut and fry in hot oil.
