Mocha Cake
Three-layer chocolate and coffee cake with a creamy mocha frosting. Better the next day.

Ingredients
Type a number or fraction (for example 0.5, 2 or 1/2) and the amounts recalculate.
- 1/2 poundsoftened butter1 cup
- 2 1/2 cupssugar
- 3 cupsflour
- 4 teaspoonscocoa
- 5eggs
- 1 cupmilk
- 2 teaspoonsvinegar
- 2 teaspoonsvanilla
- 5 teaspoonsvery strong coffee
- 1 teaspoonbaking soda
- 1/2 teaspoonsalt
- 1/4 poundbutter½ cup
- 3 teaspoonscocoa
- 1 teaspoonvanilla
- 4 cupssifted icing sugar
- 1/2 cupheavy cream
- 3 teaspoonsstrong coffee
- 1/2 teaspoonsalt
Instructions
- Separate the yolks from the whites.
- Beat the butter and sugar.
- Add the yolks one at a time.
- Separately combine the milk, vinegar, vanilla and coffee.
- Sift together the flour, baking soda and cocoa.
- Add the dry ingredients to the butter and sugar mixture, alternating with the milk mixture.
- Beat the egg whites to stiff peaks and fold them in.
- Divide among three greased and floured round pans.
- Bake for 30 minutes at 350°.
- Cool completely and unmold.
- For the frosting, melt the butter until lightly golden.
- Add the remaining ingredients and mix until smooth and spreadable.
- Spread over two of the layers, stack and cover the top and sides.
