Mocha Cake

Three-layer chocolate and coffee cake with a creamy mocha frosting. Better the next day.

Ingredients

Type a number or fraction (for example 0.5, 2 or 1/2) and the amounts recalculate.

  • 1/2 poundsoftened butter1 cup
  • 2 1/2 cupssugar
  • 3 cupsflour
  • 4 teaspoonscocoa
  • 5eggs
  • 1 cupmilk
  • 2 teaspoonsvinegar
  • 2 teaspoonsvanilla
  • 5 teaspoonsvery strong coffee
  • 1 teaspoonbaking soda
  • 1/2 teaspoonsalt
  • 1/4 poundbutter½ cup
  • 3 teaspoonscocoa
  • 1 teaspoonvanilla
  • 4 cupssifted icing sugar
  • 1/2 cupheavy cream
  • 3 teaspoonsstrong coffee
  • 1/2 teaspoonsalt

Instructions

  1. Separate the yolks from the whites.
  2. Beat the butter and sugar.
  3. Add the yolks one at a time.
  4. Separately combine the milk, vinegar, vanilla and coffee.
  5. Sift together the flour, baking soda and cocoa.
  6. Add the dry ingredients to the butter and sugar mixture, alternating with the milk mixture.
  7. Beat the egg whites to stiff peaks and fold them in.
  8. Divide among three greased and floured round pans.
  9. Bake for 30 minutes at 350°.
  10. Cool completely and unmold.
  11. For the frosting, melt the butter until lightly golden.
  12. Add the remaining ingredients and mix until smooth and spreadable.
  13. Spread over two of the layers, stack and cover the top and sides.
