Carrot Soufflé
A soft carrot soufflé with egg, butter, cheese and a touch of sugar, baked until set.

Ingredients
Type a number or fraction (for example 0.5, 2 or 1/2) and the amounts recalculate.
- 2large carrotsor 4 small ones, with skin and very soft
- 3eggs
- 1 pinchroyal powder (baking powder)
- 1/4 cupmelted butter
- 1/4 cupfinely grated cheese
- 2 1/2 tablespoonssugar
Instructions
- Cook the carrots until soft, peel and mash with a fork. Put them in a bowl.
- Add 3 eggs like this: first the yolk and then the beaten white at the end.
- Add 1 pinch of royal powder, the melted butter, the grated cheese and the sugar. Stir well.
- Place in a greased and floured baking dish in the oven at 350° until a knife comes out clean, about ½ hour to 45 minutes.
