Stuffed Potatoes with Mushrooms and Cheese
Baked potatoes stuffed with buttered mushrooms and Cheddar cheese, gratinated in the oven.

Ingredients
Type a number or fraction (for example 0.5, 2 or 1/2) and the amounts recalculate.
- 2large potatoes (or 4 small ones)unpeeled and baked
- 100 gsmall mushroomschopped
- 25 gbutter
- 100 ggrated Cheddar cheese
- saltto taste
- freshly ground black pepperto taste
Instructions
- Cut the potatoes in half and scoop them out, placing the flesh in a bowl.
- Fry the mushrooms in the butter until soft.
- Mix the mushrooms with the potato flesh and 50 g of the cheese, with plenty of salt and pepper.
- Stuff the potatoes, sprinkle the rest of the cheese on top and gratinate in the oven.
Notes and variations
- Variation: add 50 g of chopped ham and reduce the mushrooms to 50 g.
