Fattoush Salad

A fresh Arabic salad with lettuce, tomato, cucumber and toasted pita, dressed with lemon and sumac.

Ingredients

Type a number or fraction (for example 0.5, 2 or 1/2) and the amounts recalculate.

  • 1romaine lettucetorn by hand, including the stalks
  • 3radishesunpeeled, thinly sliced
  • 2ripe salad tomatoesdiced
  • 1/2large cucumberpeeled and chopped
  • 1/2red onionsliced into strips
  • 2 clovesgarlic cloveschopped
  • 10pitted purple olivesin pieces
  • 2green limesjuiced
  • 1/8 cupextra virgin olive oilto taste
  • 1 tablespoonchopped fresh flat-leaf parsley
  • salt and pepperto taste
  • 2pitas (Arabic flatbread)cut into triangles
  • 1 teaspoonsumac (Arabic spice)if available

Instructions

  1. For the dressing: chop the onion and garlic, put them in the lime juice and oil with a pinch of salt, and let macerate for 15-20 minutes.
  2. Toast the pita in the oven with oil over very low heat, 3-4 minutes per side, until golden.
  3. Mix all the ingredients except the lettuce, add the macerated onion, salt and pepper, and let rest for 30 minutes.
  4. Add the lettuce and, when serving, place the pita triangles on top.
